Gluten + Dairy Free Banana Muffins

Ingredients

  • 4 medium sized over ripe bananas, mashed
  • 1.5 cups gluten free flour (Bobs Red Mill 1:1)
  • 1 large egg, whisked
  • 1/3 cup dairy free butter (or regular if your stomach can handle it!)
  • 1/2 tsp cinnamon1/2 tsp baking soda1/4 tsp salt
  • 1/2 cup or desired about of dairy free (or regular) chocolate chips (optional)

Directions

  1. Preheat oven to 375F.
  2. Combine bananas and melted butter.
  3. Add whisked egg, cinnamon, baking soda, and salt - combine.
  4. Add gluten free flour - combine, but don’t over mix!
  5. Stir in chocolate chips if using them.
  6. Spoon into mini muffin tray, bake for 12 minutes or until toothpick comes out clean.

*Note - can also be made in regular muffin tin, bake for 25 minutes or until toothpick comes out clean.

OR - 8x8 baking pan, bake for 20-25 minutes or until toothpick comes out clean.
